Game Birds Native to Maine

Maine’s Northern woods are a hot spot for game bird hunting, especially in the autumn months.  Some of the birds most commonly hunted in the area include grouse, pheasant, wild turkey and woodcock.  In this class, we will discuss hunting traditions and ways to prepare these native birds for a feast.  Dishes include Pheasant Terrine with Dried Cherries and Pistachios, Roast Grouse with Gooseberries and Grilled Woodcock on Autumn Squash Risotto with Mushroom Ragout.
